Do these sound like good GCSE options to take?

The only thing I might worry about on that list is the Textiles one, because that is on the Cambridge list of qualifications that might not be suitable for an education at Cambridge. However, if you're not planning on Cambridge, I wouldn't worry so much. It's more important what you do for A-level, to be honest, which (for medicine) will almost certainly be Maths, Physics, Chemistry and Biology.
